Southwest Chicken Tacos


 

Wow, that was a quick week. Don’t you agree? I was told when I was younger that the older you get, the faster time passes. How true I have found that to be. Going from child, to mother and then to grandmother seems to have happened so very quickly. I have learned to cherish moments more with each passing year. Just another reason to spend more time enjoying your meals than you do preparing them. One thing I have become quite creative with, is leftovers. Soups have become a specialty. But sometimes you just want something different.


I am lucky to be able to scan the shelves of Yesterday’s, the gift shop connected to Patti’s restaurant, each day when I leave for home. I am always finding new seasoning, dip mixes or other food products that Ann and Mitzi find on their marketing trips. When they find exceptional items, they are sure to have them on the shelves as soon as possible.


I happened upon a Patti’s product that caught my eye just yesterday. Patti’s Black Bean and Corn Salsa. I took it home knowing just what I was going to do with it. And yes, it was to help me with some leftovers.


I had baked some large chicken breast for lunch and had two left over. Southwest Chicken Taco’s were about to be made. With the help of Patti’s Black Bean and Corn Salsa.


It was a quick, but oh so tasty meal. So, I just had to share the “how to” with you today.


You will need 2 cooked and shredded, boneless chicken breasts. Place them in a baking dish and pour a jar of Patti’s Black Bean and Corn Salsa onto the chicken. Bake or microwave until hot all the way through. Spoon into tortillas and top with your favorite toppings. I used shredded lettuce, Mexican blend cheese, and a little sour cream. It was enough for about 8 delicious tacos. You just can’t get any quicker than that. And I am going to grab me another jar of that salsa tomorrow, because I know now how easy it will be to make an excellent pot of chicken tortilla soup. So much flavor in one little jar.
